At the ‘F-Pico Fair 2025’ held at Tokyo Big Sight, we proposed a low-cost and efficient production setup for aquaculture red sea bream in collaboration with the Process Center (PC).
By processing with a PC, the workload at the store is reduced.

It received great reviews when introduced to the attendees from the retail stores.
Specifically, we propose an alternative operational method that involves delivering live fish from the production area and processing the fish at the market, as opposed to the traditional method.
As introduced at the fair, we outsource the semi-dressing processing of sea bream to a local producer and deliver it in ice water inside a large tank (danbe) to the PC.
I illustrated the mechanism for processing in a file on the PC.
Since this operation does not use live fish trucks, the transportation costs for fish are significantly reduced compared to conventional operations.The burden of fish preparation in the store is also minimal, allowing us to display red sea bream products on the sales floor from the start of the morning.
